This week the I ♥ Cooking club are looking for „Moreish Meals“. This means dishes you want to keep eating more of. It’s blueberry season in Germany and last year we already enjoyed the
from Nigel Slater. It was so delicious, that I decided to make it again. My husband was really delighted that he got this pudding again. I halved the recipe, which also could found online.
Blueberry Batter Pudding from Nigel Slater 
Yield: 1 round oven proof dish Ø 18 cm and 2,5 cm high serves 2

Zutaten:
- 2 eggs, size M
- 40 grams wheat flour type 405
- 45 grams caster sugar
- 125 ml single cream
- 115 ml milk, 3,5 % fat
- 150 grams blueberries
- butter for greasing the dish
TO SERVE
INSTRUCTIONS
- Butter the dish. Whizz all the ingredients except the fruit in a blender or food processor, or beat together with a hand-held whisk.
- Tip the fruit into the dish, pour over the batter, then bake in a preheated oven at 200C/gas mark 6 for about 40-50 minutes, till the batter is lightly risen, golden and lightly firm to the touch. If the surface seems to be browning too much then cover for the last 10 minutes or so with kitchen foil. Leave in the switched-off oven for 10 minutes. Dust with icing sugar before serving.

Not sure how I managed to miss this one in the book, but I’m definitely going to bookmark it now. I love the simiplicity of this – it kind of reminds a bit of a clafoutis, and I love that you could make this with any manner of berries either fresh or frozen. Can’t wait to try it – definitely moreish I’m sure.
